Rosemary Balsamic Chicken

2 chicken breasts

½ teaspoon chicken rub

1 tablespoon olive oil

¼ cup balsamic vinegar

1 teaspoon garlic finely chopped

¼ teaspoon ground black pepper

¼ teaspoon Sandra’s Spice

2 teaspoons rosemary finely chopped

3 shallots

½ cup chicken broth

1 cup broccoli florets

Place chicken breasts on a plate and dust with chicken rub, massage into both sides. In a small bowl add olive oil, balsamic vinegar, garlic, black pepper, Sandra’s Spice, rosemary and whisk. Brush marinade over chicken both side.

In a sauté pan over medium high heat, lightly coat with olive oil or cooking spray. Add chicken and brown on both sides. Reduce heat to low, add the remaining marinade, shallots, chicken broth, broccoli, and cover until chicken juices run clear.
