Cashew Chicken Over Zucchini Noodles

Dressing

3 tablespoons apple cider vinegar

2 tablespoons grape seed oil

1 tablespoon orange marmalade

1 teaspoon Dijon mustard

½ teaspoon black pepper

1 inch ginger root finely chopped

1 teaspoon minced garlic

¼ teaspoon cayenne pepper

½ teaspoon Sandra’s Spice

salt to taste

1 ½ lb’s chicken tenders

½ cup sliced mushrooms

1 cup broccoli florets

½ cup unsalted cashews

½ red onion chopped

1 zucchini (use vegetti to make noodles)

In a mixing bowl add all dressing ingredients and stir until smooth. In a saucepan over medium heat add dressing, chicken, mushrooms and stir. When the chicken is almost cooked add half the onions, all the broccoli, cashews and stir, making sure theyi are well coated in the marinade. Before servings add the remainder onions and serve over raw zucchini noodles.
